Asparagus are still harvested individually by hand. The sprouts grow just beneath the surface. The harvest helpers find the appropriate point for separating at the bottom by digging for it with their hands. After the "Cut", that means a shock-like section with a special asparagus cutter, the resulting hole in the ground is covered over and the surface is smoothed. That is the reason why the total harvest is very personnel-intensive. Traditionally in Germany work seasonal harvest helpers from Eastern Europe.
